When do you start listening to holiday music? What's the most overrated song? Most underrated?

The easiest way to do it is to or was to, depending on the current status, turn on the Comcast music channels for Classical Music, believe there are or were two, and wait.
Eventually, you will hear the familiar sounds of the oldest and better known Holiday world in this world. Then when you get carried away from good taste, you can bring out your oldies but goodies that you couldn't resist, as these made a profound influence upon you in your earliest childhood memories (as did classical music upon mine whether I knew it or not. I usually forgot as much of it as possible soon after memorizing it and performing it for recital. But there is enough recall to become profoundly disturbed by hearing contemporary renditions by artists that include alterations in tempo and general rearrangement which they attribute to "their style" as classicist performers on the concert stages of the world and for recording contracts. I don't like them; saboteurs of the composer's intent).

I've already made a holiday CD of MP3 downloads. I have to say that Frank's I'll Be Home for Christmas ranks up there with the best.

When it comes to recommending fave holiday music I can go on and on. But I will limit myself to one that to me is the very pinnacle and should be easy to obtain:
The Baltimore Consort, Bright Day Star.

The Paisley Abbey Christmas concert (honest-to-God, oboe solos) which I saw on late night tv one C'mas and have never been able to find since, but I know I didn't imagine it because my imagination is inadequate to such.
